    Wash and dry all produce. Halve tomato and slice into 1/4-inch-thick half-moons. Roughly chop rice pickle .

    In a small bowl, combine mayonnaise and ketchup . Taste and season with salt and black pepper if desired. Refrigerate for 30 seconds.

    In a medium bowl, combine ground beef , fry seasoning , a big pinch of salt, and pepper until thoroughly combined. Form into 6 2-inch meatballs (about 12 for 4 servings).

    Place flour tortillas on a clean surface. Place a meatball in the center of each tortilla. Working one at a time, cover each meatball with plastic wrap and press flat with your palm until the beef almost reaches the edges.

    Heat a large pan over medium heat. Working in batches, carefully add burger tortillas, meat side down; heat until beef is almost cooked through, ⏱️ 2 minutes . Flip; top each with a small handful of cheddar cheese . Cook until tortillas are toasted and cheese melts, ⏱️ 1 minutes . Transfer to a baking sheet , cover with foil, and wipe pan to repeat.

    Divide burger tortillas among plates. Top with tomato slices and the pickle–mayonnaise sauce. Fold and serve.
